Cookies for the Health of it !

These sweet, "heart"-y cookies are just plain good.

After setting your oven to 350, melt 3 tablespoons of
unsalted butter and mix with 3 tablespoons extra virgin
olive oil.  Add 3/4 cup packed light brown sugar, 1/3 cup
all-purpose flour, 1/3 cup whole-wheat flour, 3/4 teaspoon
baking soda, 1 1/2 cups regular oats, 2 tablespoons flax
seed, 1/2 teaspoon salt and stir until smooth.  Lightly beat
an egg and toss in.  Next add 1 1/2 teaspoons vanilla or
other choice extract flavoring (coconut, perhaps?) and 1
cup chopped figs.  Another kicker can be 1/2 a banana if
desired.  Finally, fold in 3 ounces of chopped bittersweet
chocolate.

Drop by the spoonfuls onto lightly greased baking sheets
and bake for around 12 minutes.

Now enjoy these gooey delights with a cold glass of
soymilk or other beverage of choice!
